Matcha is made from green tea leaves from the young shoots of the plant. Three weeks before harvesting, the leaves are shaded, and the change in sunlight raises the level of chlorophyll, which is rich in nutrients. After harvesting, the leaves are steamed to stop fermentation, which would reduce valuable elements. After drying, the leaves are ground in a quern. This produces a light green powder.
